Super Speed mode
Complete Championship mode. The game will remove 20 of the 25 cars (and mirrors in cockpit view) to boost the frame rate to 60fps.
Rainy weather
Hold L + R + Down at the transmission selection screen in Arcade mode. Continue to hold buttons down until the game begins.
Drive pace car
Complete Championship mode to unlock a new pace car in Arcade or High Speed mode.

Disable opponent
Rear-end your opponents car in Championship mode. The wing will break and your competitor will be unable to reach maximum speed without first making a pit stop.
(Note: Enable the "No Collision" option, to keep the damage to your car at a minimum.)
Bonus camera angle
Complete Championship mode, finishing first in every race to unlock an overhead camera view similar to Micro Machines

Complete Championship mode to unlock the bonus Japanese driver.
